Bactoferm mold 600 is a live culture that enables the growth of white/light grey mould on the exterior of salami's. This process not only gives salami a traditional southern European appearance, it also inhibits the growth of undesirable bacteria, yeasts and moulds.  It enhancers flavour as well, producing a "mushroom"  flavour note. This product is recommended for salami's dried at low temperatures and/or low humidity. 

DIRECTIONS

* Mix one 25g pouch into 1 litre of water at approximately 20C and let stand for 2 hours at room temperature.

Please note:  Chlorine is often present in tap water and can reduce the effectiveness of the solution. We recommend using pure drinking water or leaving tap water in a fridge for a 2 days prior to use. (This method removes most of the chlorine from tap water ) 

* Add a further 9 litres of water and mix well. 

* The mould solution can then be sprayed on the exterior of the salami using a spray bottle. You can also soak casings in the solution prior to stuffing then spray the salamis again when filled. This technique produces the best results.

* Stir the solution regularly to keep the mould spores suspended and discard any unused solution. The solution must be used on the same day that it's mixed.

Please note that this product can be used for both dry-ripened and cooked salami. Great care and responsibility needs to be taken when making any dry-ripened salami.  Results can vary significantly due to a number of factors including ingredients, method, cleanliness, meat source and drying conditions. As such, Huon Distributors will not be held responsible for the outcome. The only way to guarantee a safe salami product is to destroy any existing pathogens by cooking to an internal temperature of 70 Degrees Celsius.
